就愛奢華 (一) 膜拜•酒

先知帶領著信眾向神膜拜。

什麼是神？神是一個舌燦蓮花的騙子。

什麼是先知？先知是遇到一個騙子的第一個傻子。

什麼是信眾？信眾是聽信第一個傻子胡言亂語的一大群傻子。

在這個時代，要成為受到眾人膜拜的神，似乎是一件很容易的事。

一個人在電視上面搞搞笑，或者厚顏無恥的說些尖酸刻薄的話，他就成了神，就能召來一群死忠粉絲的追隨。扮演先知角色的經紀人，自然會努力為他拓展演藝事業。

一個人開間神壇，搞些妖言惑眾的把戲，他就成了神，門外就會有人爭相獻財獻身。第一個獻身的當然就是先知。

一個下流卑鄙的人抓住時機登上政壇高峰，義正辭嚴的為群眾中編織一個永不實現的美夢，他就成了神，就能受到更多愚眛信眾的膜拜。即使貪污濫權，仍然會有同樣無恥的先知們替他頂著。笨到無以復加的傻子們繼續膜拜，一面拜一面哭。

相形之下，要成為一支膜拜酒(cult wine) 卻是多麼困難！它必須具備這些條件：

極為稀有且需求極高

年產量不可以超過1,000箱。

稀少到這個地步，才會造成世界各地愛酒人士的瘋狂追逐，競相爭購。

幾近完美的酒評與分數

你家隔壁老陳自己浸泡的壯陽藥酒產量也很低，但是不值得膜拜。膜拜酒必須受到W A與WS的一致認可，並且賦予接近滿分的評價。

最頂尖的釀酒師

釀酒師要讓酒表現獨特的吸引力，詮釋當地的風土條件，又能兼顧當代的潮流趨勢。這不是你家隔壁老陳辦得到的。像Heidi P. Barrett, Helen Turley, David Abreu, Mia Klein, Bob Egelhoff這些釀酒師，他們才有能力讓酒受到膜拜。

他們是酒界的先知。

嚴格管控銷售通路

你想買嗎？對不起，我們不賣。姿態擺得不夠高，怎能受到膜拜？

只有少數長期忠誠的直客可在郵購名單上排隊等到幾瓶配額。不然，就是酒莊嚴選的頂級餐廳能夠分到幾瓶珍釀。其他的人只能在多次轉手的公開市場上高價取得。

在拍賣會上創造高價

如果價格不能超越五大，直逼康帝，那又算什麼膜拜酒？

想知道自己的斤兩，就得去拍賣會上試試身手。

以Screaming Eagle為例，在2001年的納帕酒款拍賣會上，一名收藏家出價美金65萬(台幣兩千一百多萬)標下1992-1999年份共8瓶3公升裝的卡本內。

我願意膜拜。不拜神，

David Abreu, the tireless viticulturalist consults for some of California ’s finest producers, who recognize his perfectionist attitude in planting and maintaining vineyards. David is best known as a viticulturalist, but the quality of his own wines speaks to the extraordinary work he does in the vineyard, keeping yields as small as any of his peers, and massaging the wines through the winemaking and upbringing in cask with virtually no intervention. There is no acidification or clarification, resulting in wines that represent the natural bottled essence of their vineyard sites. Moreover, those wines have extraordinary aging potential.

David believes the quality begins in the vineyard where the fruit is obtained. Harvesting is done in the early morning to take advantage of cool temperature. The grapes are put into small lugs that hold only 30 pounds of fruit. A sorting is performed prior to the destemming, and a second sorting is done afterward to remove any damaged fruit or vegetal material. Primarily whole berries are used during the fermentation, which generally begins after a 3-5 day prefermentation cold maceration. After a relatively long maceration of 3-4 weeks, the wine goes through malolactic fermentation in 100% new French oak casks. It is aged 2 years in barrel, followed by another 2 years in bottle before being released.

The Colgin winemaking philosophy is to try to bring the best possible grapes from exceptional hillside vineyards into the winery and then let them “speak for themselves.” In order to reach the vineyards’ full potential, they emphasize small yields, balanced water and nutrition, and finally physiologically ripe grapes that they determine primarily by taste but also laboratory testing.

第五拜： Kistler Vineyards

Kistler Vineyards was founded in 1978 by the Kistler family. The first vintage in 1979 produced 3,500 cases of wine and since then the winery has slowly grown to the planned production level of about 25,000 cases per year.

Kistler Vineyards has two central figures, Steve Kistler and Mark Bixler. Steve Kistler received a B.A. from Stanford University, studied at U.C. Davis and Fresno State University for two years, and was an assistant at Ridge Vineyards for two years before founding Kistler Vineyards. He serves as winemaker and oversees vineyard operations. Mark Bixler received degrees from M.I.T. and U.C. Berkeley, taught Chemistry at Fresno State University for seven years, and worked at Fetzer Vineyards for two years. Mark shares winemaking responsibilities, and is the chemist and business manager for Kistler Vineyards.

第六拜： Kongsgaard Wine

Fifth-generation Napa natives John and Maggy Kongsgaard produce The Judge, Chardonnay, VioRous, Syrah and Cabernet Sauvignon. Shy-bearing vineyards and traditional low-intervention winemaking techniques produce powerful, graceful wines -- high intensity expressions of vineyard and variety. The core of their endeavor is the ten-acre vineyard they planted in the late 1970s on a rocky hilltop in southern Napa Valley which has belonged to the Kongsgaard family since the 1920s. In addition to these family acres, they direct the farming under long-term contract on another seven acres in the Napa Carneros and three acres near St. Helena. The winery, on the eastern rim of Napa Valley, is a cave drilled into the volcanic rock. Production is limited to what they can make with their own hands.

With Remarkable Back-to-Back Vintages of "Perfect" Wine,Robert Parker’s Wine Advocate Awards 2002 & 2003 Cabernet Sauvignon 100 Points Snohomish, Wash. April 24, 2006 – The newest issue of Robert Parker’s Wine Advocate, one of the most influential wine publications in the world, has awarded Washington State’s first 100-point wine ratings to two Quilceda Creek Cabernet Sauvignons. Both the 2002 and 2003 vintages of the winery’s Cabernet Sauvignon received 100 points in the April 24th issue of Parker’s Wine Advocate. It is the first time any Washington wine has earned 100-points--an achievement only a handful of wineries in the world can claim.

Receiving two 100-point ratings for consecutive vintages puts Quilceda Creek in even more rarefied territory. The Wine Advocate has given 100 points to consecutive vintages of the same wine only five other times since it began publishing in 1978. "There isn’t a Cabernet producer with this winery’s track record for consistency," writes the Wine Advocate in its latest issue. "Now Quilceda Creek has produced two wines that are second to none."

The intense, distinctive wines of Elaine and Manfred Krankl are highly sought after for good reason: they are some of the very best wines being produced in the United States. And though the wines are already of the highest quality and sell out quickly each vintage, they continue to strive to make improvements. For those who have had the pleasure (and luck) to taste these wines over the years, one can notice even more refinement and harmony in each new release.

Sine Qua Non has its own winemaking facility in Ventura, not far from the Santa Barbara vineyards where the fruit is sourced from the region's best vineyards. In the last few years Elaine and Manfred have begun creating their own vineyards dedicated to Rhone varietals. Their winemaking philosophy is to work in very small batches, gravity flow, natural yeasts (unless a fermentation problem is anticipated), long lees aging for the whites and repeated racking for the reds to open them up. This is a simplified explanation of a very dedicated and artistic approach to winemaking. The wines are at once very rich and elegant, superbly balanced and thoroughly harmonious with food, never overwhelming.

第十拜: Sloan Estate

Sloan Estate is the newest cult wines similar to Screaming Eagle, Harlan, Bryant Family and the rest. This wine is Asterick from Sloan. It is NOT the Estate wine but rather a second bottle from Sloan. This is a way to try the wine without the price of the Estate wine. Parker loves Sloan having given prior vintages scores of 98, 100 and 100. This is an absolute must for the serious collector. It's remarkable wine.
